A bit about them: 

Danielle Alvarez is recognised as one of Sydney’s best chefs, with the role of Head Chef at Merivale’s Fred’s in Paddington, New South Wales.

Born in Florida, U.S.A, Alvarez has trained at Thomas Keller’s The French Laundry, soon after receiving a position at the iconic Chez Panisse by Alice Waters in Berkley. Relocating to Australia on chance-holiday, Alvarez has become known for her refined yet understated charm.

Alvarez began her food journey inspired by her Cuban heritage, surrounded by cooks. Ultimately it was the way of Californian cooking that called out to her to become a chef.

 “That idea of taking things out of the garden and cooking with them that day, that’s a very Californian thing as everything grows there. It all felt very communal, free, creative and fun. And I just fell in love.” (Food Service News)

Since opening in 2017, Fred’s has been awarded Gourmet Traveller’s Restaurant of the Year 2018, and is a must-have takeaway and fine dining experience for foodies around the country.
