A bit about them:

From budding documentary maker to pastry chef comes Kay-Lene Tan. Now the executive pastry chef for notable Melbourne establishments Tonka and Coda restaurants, she was inspired by her mother and grandmother, opting for a career change from behind the camera, taking a leap of faith into the eclectic world of hospitality. Tan quickly enrolled in trade school and began her culinary journey studying to be a pâtissière.

Upon the completion of her studies, Tan began training under the guidance of award-winning chef Joel Robuchon – once named “Chef of the Century” by French restaurant guide Gault Millau (Jo Robin, Broadsheet)

Today Tan melds her French training alongside her Peranakan heritage, creating dishes with a depth like no other, framed perfectly by the refined spice of Tonka Restaurant (Indian cuisine) and Coda’s Vietnamese influence.
