A bit about them:

Born and raised in Estonia, Kabal found inspiration in food from her parents at a young age, and by the age of 18 she had relocated to London to study culinary arts and management. Since moving to Melbourne, Kabal has worked as head-chef at Spanish restaurant Anada, and now fronts winery and restaurant, Tokar Estate. 

Kabal focuses her cooking around respecting the whole ingredient with invention from minimal waste; a strategy stemming back from peasant food across Europe during times where people had little supplies and resources. “That’s what I try to do... really see what we are wasting and what we can do with stuff that would normally go in the bin.” (Conversation with a Chef)

In a homage to her roots, Kabal has become known for her signature dish of offal, becoming a featured item on the Anada and Tokar Estate menu.
